A Little Science, Simplified
Acidity is measured in pH, on a scale of 0 to 14. Anything from 0–7 is acidic; 7–14 is basic. Water sits right in the middle at 7.
Here's the twist: pH is logarithmic, so each whole point is a 10x jump. That means a coffee with a pH of 6 is 10x more acidic than water. The higher the pH, the gentler it is on your stomach.
