- 1/2 lb. purple potatoes (about 1 medium), peeled
- 2 Tbsp. olive oil
- 1 Tbsp. unsalted butter
- Salt and ground pepper
- 2 eggs (scrambled)
- 1 Tbsp. Low-fat sour cream
- 1/4 fresh scallions
- Whole wheat tortillas
Grate your purple potatoes and let soak in a bowl of water to remove extra starch, tossing the mixture for about 15-30 seconds. Transfer the shredded potatoes into a strainer to allow the excess water to drain. Place the potatoes into a mixing bowl to season with salt and pepper.
In a cast-iron skillet or frying pan, heat the olive oil and butter over medium heat. Add the potatoes once sizzling and spread in an even layer to allow the potatoes to cook until golden. Flip with a spatula and cook until browned. Transfer to paper towels to drain the excess grease. Once dry, add your potatoes and scrambled eggs together and wrap in in whole wheat tortilla.
